On Thursday, I was resting on the couch, trying to determine whether the smudge on the ceiling was a smudge or a sneaky spider (smudge, turns out), while simultaneously constructing a mental checklist of dessert recipes for Friday night’s dinner. I was not having much success with either endeavor.
Then the mail arrived, and with a copy of Everyday Food, which is always surprising, since I forget on a monthly basis that I got a free subscription for some reason.
On the last page of the issue is a recipe for almond thumbprint cookies with apricot filling — and we already had all the ingredients, except for apricot jam. But here’s what we did have: mango butter!
(Mango butter is like apple butter — sweet and delicious, but not in any way related to dairy.)
Dessert quandary solved.
