Quasi-Pad Thai on the Fly

Thursday Night Supper

I didn’t like any of the pad thai recipes that I came across, so I took bits of each and added a few ingredients to come up with this concoction.  Our local grocery store was also sadly lacking in wide rice noodles, so we ended up using very thin rice sticks.

This version is noodles, tofu (with soy sauce), pea pods, bean sprouts (some stir-fried, some left raw for garnish), whole peanuts (some stir-fried, some for garnish), sauce (made with fish sauce, sugar, rice vinegar, and garlic), and cilantro & limes for garnish.

Not too bad for a quick fix!
