August Tomato Sandwich in September

Ok, so it was yesterday’s lunch (along with a tomato and radish salad).

Here’s how to make the perfect tomato sandwich (which I learned from my mother):

  • 1 tomato (this one is from RR’s garden! picked 5 minutes before sandwich time)
  • 2 slices hearty bread
  • salt
  • mayo

Toast the bread and then — this is crucial — let it cool (hot bread + mayo = gross) while you cut the tomato  into nice slices.  Then the mayo goes on the bread, the tomato goes on the mayo, the salt goes on the tomato, and you’re off to the races.

It’s times like these when I remember that summer does not officially end until September 21st . . . even if it is chilly and rainy.

    Delectable! Nothing like a good tomato sandwich, and Carolyn makes the best. Note the light but even toasting. Yum.
